#FreedomFood: Recipes to Make Your Life Easier
PHS columnist, Nicole Locke, brings us one of those go to recipes which make life that little bit easier when you're rushed off your feet or facing a tight deadline...
There are recipes that are no longer recipes. It’s just food everybody eats when you can’t spare one more second and have half of a brain cell after a stressful day.
I have several such recipes. I blame my procrastination and deadlines. I’m almost embarrassed to share the following recipe because it’s so simple. But the bottom line is it’s really good. I’ve made changes over the years, so I’m going to share the original and altered recipe.
CHICKEN PAPRIKA (altered)
6lbs chicken thighs (with or without bone, about 10 pieces)
Salt and pepper to taste
1 lrg chopped onion
1 tbl garlic granules
5 tbl of paprika
2 tins tomatoes
1 cup soured cream
Buttered egg noodles
Broccoli (for something green!)
1. Skin chicken, set aside
2. In large oven proof dish mix: chopped onion, tinned tomatoes, paprika, salt, pepper, garlic
3. Snuggle the chicken in sauce and bake uncovered at 350 for 45 min
When almost done, cook egg noodles drain, slather with butter. At the table serve with soured cream (people can put as much as they want), and some broccoli on side.
CHICKEN PAPRIKA (original)
3 lb chicken pieces w/ skin and bones
1.5 tsp salt
1/2 tsp black pepper
2 tbl veggie oil
1 lrg onion, chopped
4 garlic cloves, chopped
1.5 tbl sweet hungarian paprika
2 (8 oz) cans tomato sauce
1.5 cups water
1 cup sour cream
accompaniment: buttered egg noodles, garnish parsley
1. rinse chicken and pat dry, then sprinkle w/ 1 tsp salt and pepper
2. heat oil, brown chicken, transfer chicken
3. add onion and garlic to pot and saute'
4. add paprika, tomato sauce, water, chicken w/ skins side ups, simmer until chicken is very tender, add salt pepper to taste
5. transfer 1 cup sauce to bowl, whisk sour cream, then stir mixture into remaining sauce and serve with buttered noodles
